It’s never too early for something sweet – Rauris Vanilla Crescents – Original Recipe from Raurisertal
When it snows outside and the scent of vanilla and butter fills the air inside, it’s time again for our Rauris Vanilla Crescents – delicate, crumbly, and simply heavenly! And because sharing brings joy, today we’re revealing our original recipe from Rauris.
What you need:
- 280 g flour
- 100 g ground almonds (or hazelnuts – depending on taste)
- 70 g sugar
- 1 pinch of salt
- 200 g cold butter
- 1 packet vanilla sugar
For the vanilla-sugar topping:
- 3 tbsp powdered sugar
- 2 packets vanilla sugar
Here’s how:
- Prepare the dough:
Mix flour, almonds, sugar, salt, and vanilla sugar in a bowl. Add the cold butter in small pieces and quickly knead everything into a smooth dough. Wrap in cling film and chill for at least 1 hour. - Shape the crescents:
Remove the dough from the refrigerator, divide into small pieces, and shape into crescents. Do not make them too thin – they should remain beautifully tender. - Bake:
Place on a baking sheet lined with parchment paper and bake in a preheated oven at 170°C (top/bottom heat) for approx. 12–15 minutes until lightly golden brown. - Roll while still warm:
Carefully roll the hot crescents (they are very fragile!) in the powdered sugar-vanilla sugar mixture. Let cool – and enjoy!
Happy anticipation & see you soon in the Rauris snow paradise
Your Alpina Team
