It’s Never Too Early for Something Sweet – Rauriser Vanillekipferl – Original Recipe from Raurisertal

When it snows outside and the scent of vanilla and butter fills the air inside, then it’s time again for our Rauriser Vanillekipferl – delicate, crumbly, and simply heavenly! And because sharing brings joy, today we’re revealing our original recipe from Rauris.

What You’ll Need:

  • 280 g flour
  • 100 g ground almonds (or hazelnuts – to taste)
  • 70 g sugar
  • 1 pinch of salt
  • 200 g cold butter
  • 1 packet vanilla sugar

For the Vanilla Sugar Topping:

  • 3 tbsp powdered sugar
  • 2 packets vanilla sugar

Here’s how:

  1. Prepare the dough:
    Mix flour, almonds, sugar, salt, and vanilla sugar in a bowl. Add the cold butter in small pieces and quickly knead everything into a smooth dough. Wrap in cling film and chill for at least 1 hour.
  2. Shape the Kipferl:
    Remove the dough from the refrigerator, divide into small pieces, and shape into Kipferl. Don’t make them too thin – they should remain nicely delicate.
  3. Bake:
    Place on a baking sheet lined with parchment paper and bake in a preheated oven at 170°C (top/bottom heat) for approx. 12–15 minutes until lightly golden.
  4. Roll while still warm:
    Carefully roll the hot Kipferl (they are very fragile!) in the powdered sugar-vanilla sugar mixture. Let cool – and enjoy!
